The XML in courselab is a repeating and nested list but isn't actually the type of XML that lends itself to what you want to do. However for it's type it is well formatted.
You will have nightmares with the nesting due to the elements used on each page changing.
As for XLS or XLT schema I'd wonder why as the pages aren't generated by these so making one might well prove rather a waste of your time.
