My customer wants to run Scorm 2004 compliant courses from their own LMS. How do I facilitate this? Is it a simple upload of the Zipped publication to their server?

You should just publish for LMS and courselab will bundle everything into a zip. The zip is then uploaded by the LMS and added to whatever schema it's using to present the content to users.
So yes it is as simple as yopu think!!
